Highclere Castle has an exciting opportunity for a Sous Chef.

Highclere Castle is a globally recognised brand and one of the most famous historic houses in England. The Castle has become well known as the location of the successful TV series Downton Abbey and attracts thousands of visitors and many events throughout the year. Highclere is also a working estate with its own farming property management business and is located in rural Berkshire/Hampshire, less than 7 miles from Newbury town centre.

We are currently looking for a Sous Chef to join our team in a professional kitchen, assisting the Executive Chef.

The ideal candidate will be a passionate and positive chef who loves to work in the industry and is capable of assisting with producing high-quality cuisine for our prestigious events.

Duties and Responsibilities:

  • Ability to handle a section on a busy service - a good understanding of Pastry is a bonus
  • Assisting with stock management and control including ordering supplies, stock rotation and waste management
  • High standards of food hygiene
  • Assisting with the smooth running of the kitchen production areas
  • Assisting in food preparation as per the Company's food safety policy
  • Maintaining the kitchen work areas in accordance with HACCP regulations
  • Reporting any faulty equipment to the Head Chef
  • Complying with Company Food Safety and Health & Safety policies
  • Attending Company training programmes when required
  • Excellent communication skills
  • Experience in running a kitchen in the absence of the Head Chef
  • Assisting with training of the kitchen team
  • The ability to work effectively as part of a team

Skills and Attributes:

  • Knowledge of the hospitality industry
  • Holding a 706/1 706/2 or NVQ equivalent
  • Having a ‘can do’ attitude
  • Possessing a high standard of personal hygiene and appearance
  • Highly motivated and focused.

Job Types:

Full-time 5 out of 7 Rota with weekends and public holiday time worked.  

Salary:

£33,000 per annum.

  • Potential to work a 4-day week during the off peak season

This is not a live-in role and due to the location of the Castle there is no direct link with public transport, therefore it is essential to have other means of travel.

The ideal candidate should be eligible to work full time in the UK.
